Description
A creamy, cheesy chicken casserole topped with golden buttery crackers, comfort food at its finest.
Ingredients
4 cups cooked chicken, shredded
1 cup sour cream
1 cup mayonnaise
1 (10.75 oz) can condensed cream of chicken soup
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 cup grated Parmesan cheese
1 cup crushed buttery crackers (about 1 sleeve)
½ cup unsalted butter, melted
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
2. In a large bowl, mix the chicken, sour cream, mayonnaise, cream of chicken soup, cheddar, mozzarella, Parmesan, garlic powder, onion powder, oregano, salt, and pepper.
3. Spread the mixture evenly in the prepared baking dish.
4. In another bowl, mix crushed crackers with melted butter and sprinkle over the casserole.
5. Bake for 40 minutes, until bubbly and golden on top.
6. Let it rest for 5 minutes and garnish with fresh parsley before serving.
Notes
Use rotisserie chicken for convenience and added flavor.
To make ahead, assemble the casserole and refrigerate until ready to bake.
Gluten-free variation: use GF crackers and soup substitutes.
