Description
Creamy garlic butter chicken and rotini in parmesan sauce is the perfect protein-rich comfort dish, juicy chicken, tender pasta, and a rich, garlicky sauce come together in under 30 minutes.
Ingredients
12 oz rotini pasta
2 boneless, skinless chicken breasts, cubed
3 tbsp butter, divided
4 cloves garlic, minced
1½ cups heavy cream
1 cup chicken broth
1 cup grated parmesan cheese
1 tsp Italian seasoning
Salt and pepper to taste
Instructions
1. Boil the rotini in salted water until al dente, then drain it well and set it aside while you prep the sauce.
2. Heat 1½ tablespoons of butter in a skillet over medium-high. Add the chicken cubes and cook until they’re deeply golden and just cooked through. Transfer to a bowl.
3. In same skillet, melt remaining butter. Add minced garlic, sauté until fragrant.
4. Pour in chicken broth, add Italian seasoning, and simmer 1 minute.
5. Lower the heat and slowly blend in the cream, stirring as it gently thickens, this takes about 4 minutes
6. Add parmesan gradually, stirring to melt into the sauce.
7. Return chicken and pasta to pan. Toss until coated and heated through.
8. Serve hot, optionally garnished with parsley.
Notes
Add spinach or sun-dried tomatoes for variation.
Store leftovers in airtight container for up to 4 days.
Reheat gently with a splash of broth or milk to loosen sauce.
