Ingredients

  • 1 bag frozen meatballs (turkey, beef, or plant-based, ~32 oz)
  • 2 large yellow onions, thinly sliced
  • 3 cups low-sodium beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp thyme
  • 1 bay leaf
  • 1 cup shredded Gruyère or provolone cheese (optional)
  • Fresh parsley for garnish

Instructions

  • 1. Add sliced onions to bottom of crock pot.
  • 2. Place frozen meatballs on top of onions.
  • 3. In a bowl, whisk beef broth, Worcestershire, garlic powder, onion powder, pepper, and thyme.
  • 4. Pour mixture over meatballs and add bay leaf.
  • 5. Cover and cook on low for 6–7 hours (or high for 3–4).
  • 6. Remove bay leaf. Stir gently and top with cheese if using.
  • 7. Cover for 5–10 minutes to melt cheese.
  • 8. Serve with crusty bread, over rice, or roasted veggies.
  • 9. Garnish with parsley before serving.

Notes

  • Use frozen meatballs directly from freezer no thawing needed.
  • For higher protein, choose meatballs with 12g+ protein per serving.
