1½ lbs ground chicken
½ cup breadcrumbs
½ cup grated Parmesan cheese
½ cup shredded mozzarella cheese plus extra for topping
3 cloves garlic, minced
1 egg
¼ cup milk
1 tbsp fresh parsley, chopped
1 tsp Italian seasoning
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)
1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper or grease a loaf pan.
2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan, mozzarella, garlic, egg, milk, parsley, Italian seasoning, salt, and pepper.
3. Mix gently until just combined. Do not overmix.
4. Shape the mixture into a loaf on the baking sheet or press into a loaf pan.
5. Bake for 35–40 minutes until fully cooked.
6. Remove from oven, top with extra mozzarella, and bake another 5–7 minutes.
7. Let rest 5 minutes. Garnish with parsley and slice to serve.
