Potato Mozzarella Sticks That Actually Stretch (And Taste Amazing)

Crispy potato mozzarella sticks with marinara

These homemade potato mozzarella sticks are crispy on the outside, cheesy on the inside, and made with simple ingredients you already have.

Ingredients

2 lb russet potatoes, peeled and quartered

2 cloves garlic, minced

2 tablespoons fresh flat-leaf parsley, finely chopped

½ cup grated parmesan cheese, plus more for garnish

4 large eggs, beaten, divided

salt, to taste

black pepper, to taste

12 mozzarella cheese sticks, halved crosswise

1 cup all-purpose flour

1 cup plain breadcrumbs

oil, for frying

marinara sauce, for serving

fresh parsley, chopped, for garnish

Instructions

1. Boil the potatoes until fork-tender, about 30 minutes.

2. Drain and mash until smooth with no chunks.

3. Mix in garlic, parsley, Parmesan, 1 egg, salt, and pepper.

4. Form mashed potato patties around mozzarella sticks.

5. Freeze the formed sticks for 30 minutes.

6. Set up breading station with flour, eggs, and breadcrumbs.

7. Dredge each stick in flour, egg, and breadcrumbs.

8. Fry at 350°F (180°C) until golden, about 3 minutes.

9. Drain on paper towels and let cool slightly.

10. Serve hot with marinara sauce and garnish.

Notes

For a lighter version, air fry at 380°F for 12–15 minutes.

Use part-skim mozzarella and whole wheat breadcrumbs if desired.
