One-skillet beef stroganoff tortellini in creamy sauce is the ultimate 30-minute comfort food dinner. This high-protein meal combines seasoned ground beef, cheesy tortellini, and a rich sour cream sauce—perfect for busy nights.
Ingredients
1 lb ground beef
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
2 cups beef broth
1 cup heavy cream
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard
1/2 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon black pepper
1 (9 oz) package refrigerated cheese tortellini
1/2 cup sour cream
1 tablespoon fresh parsley, chopped
1/4 cup grated Parmesan cheese (optional)
Instructions
1. Heat a skillet over medium-high. Add olive oil and cook ground beef until browned. Drain grease.
2. Add onion and garlic. Sauté for 2–3 minutes.
3. Stir in Worcestershire, Dijon, thyme, salt, pepper, broth, and cream.
4. Add tortellini. Simmer for 7–9 minutes, stirring occasionally.
5. Remove from heat and stir in sour cream. Garnish with parsley and Parmesan if using.
Notes
You can substitute ground turkey or Greek yogurt for lighter versions. Refrigerated tortellini works best for one-skillet meals.
