Description

Protein-packed street corn chicken rice bowl with smoky grilled chicken, yogurt crema, and bright Mexican flavors.


Ingredients

  • 2 boneless skinless chicken breasts
  • 1 cup cooked brown rice
  • 1 cup grilled corn kernels
  • 1/4 cup non-fat Greek yogurt
  • 1 tbsp lime juice
  • 1/2 tsp smoked paprika
  • 1/4 tsp chili powder
  • 1 avocado, sliced
  • 2 tbsp chopped cilantro
  • Salt and pepper to taste

Instructions

  1. Season chicken with paprika, salt, and pepper.
  2. Grill or sear chicken on high heat until cooked through.
  3. Char corn in a dry skillet until golden and smoky.
  4. Mix Greek yogurt with lime juice, chili powder, and a pinch of salt for crema.
