Description

A flavorful high-protein Sweet Chili Chicken Bowl topped with a coconut lime drizzle perfect for weeknight dinners or meal prep.


Ingredients

1 ½ lbs boneless, skinless chicken breasts, cubed

2 tbsp olive oil

1/4 cup sweet chili sauce

2 tbsp soy sauce

1 tbsp honey

1 tsp grated ginger

1 clove garlic, minced

1/2 tsp black pepper

1/4 cup coconut milk (full-fat)

2 tbsp lime juice

1 tbsp honey (for drizzle)

1/4 tsp salt

1 cup cooked quinoa or rice

1 cup shredded carrots

1 cup shredded red cabbage

1 cup chopped cucumber

1/2 cup chopped cilantro

1/2 cup chopped peanuts (optional)

Lime wedges, for serving


Instructions

1. Whisk marinade ingredients and toss with chicken. Marinate 15+ minutes.

2. Cook chicken in a hot skillet until browned and cooked through, about 8–10 minutes.

3. Whisk coconut milk, lime juice, honey, and salt in small bowl for drizzle.

4. Divide cooked grain among 4 bowls. Top with vegetables and cilantro.

5. Spoon cooked chicken over bowls.

6. Drizzle with coconut lime sauce, sprinkle peanuts, and serve with lime wedges.


Notes

Use chicken thighs for a juicier version.

Add sriracha to the drizzle for heat.

Swap rice with cauliflower rice for low-carb.
